 at 10:28 my blood glucose (BG) was at 78.

10:58 (30 minutes) - BG 85

11:18 (50 minutes) - BG94

11:40: BG 100


in a bit over an hour, a 20 point spike, and on its way back down.

11:58: BG is 93

12:58: BG is 86


This is not a great choice, but in a pinch won't spike to bad levels.
